			<content:encoded><![CDATA[<p>We&#8217;re trying to change the world here, one cup of coffee at a time.</p>
<p>That all starts with  buying the highest quality green coffee from great farmers all over the world and ensuring that they&#8217;re earning a better than fair trade price.</p>
<p>What happens after it leaves our Roastery in Southeast Tennessee differs from one batch to the next; some of the coffees never leave the downtown shop before being consumed, some are served by great retailers, cafes, and churches, and still others are shipped to buyers across the country.</p>
<p>The more farmers we&#8217;re able to help the more we&#8217;re discovering the impact on another group&#8230;the U.S. consumer.</p>
<p>We all have choices to make when it comes to purchasing, but too often we choose based on price and convenience rather than impact and change, it&#8217;s not our fault, we&#8217;ve been trained for a long time to want the shiny rather than the sustainable.</p>
<p>So, Today we wanted to start something at our main downtown location to help further remind our local consumers of the difference we can make with every purchase. We&#8217;ve heard it called Coffee on the Wall, and <a href="http://www.npr.org/blogs/thesalt/2013/04/24/178829301/eu-embraces-suspended-coffee-pay-it-forward-with-a-cup-of-joe" target="_blank">Caffe Suspeso</a>.</p>
<p>The idea is this, whenever you&#8217;re feeling especially generous or just got that big bonus, buy two cups of coffee instead of one, the second will be &#8220;suspended&#8221; and a coffee bean will be added to the tracking mug to tell how many suspended coffees are available. The next time someone comes in who can&#8217;t afford a coffee, we&#8217;ll take one of the beans out and give them a cup of coffee.</p>
<p>It&#8217;s a little thing, but an easy way to care a little more, we can&#8217;t change everything but we can change some thing, we can change this place&#8230;</p>

<p>The weather is warming and the Patio furniture is back!</p>

<p>But what we&#8217;re really having fun with lately is competition!</p>
<p>Drake and Jeremy were finalists in the first annual Chattanooga Coffee Throwdown a couple weekends ago, with Jeremy <strong>bringing home the win</strong> for Bonlife in the Brewed Coffee Category with his Chemex of Haitian Bleu, Drake also impressed with his Hario V60 of our limited release Panama Geisha Juliette.</p>
<p>Next up, Jeremy will be competing in the <a href="http://usaeropress.tumblr.com/" target="_blank">US Aeropress Championships</a> at the <a href="http://www.scaaevent.org/" target="_blank">SCAA event</a> in Boston in April, come by the next few weekends and you may get to sample his special <a href="http://www.allianceforcoffeeexcellence.org/en/cup-of-excellence/" target="_blank">Cup of Excellence </a>winning Columbian competition coffee as he works to perfect his Aeropress recipe.</p>

<p>Because it&#8217;s a short month, and because we love the Sowden Softbrew (which you can also buy in our stores and on this site!), we&#8217;re carrying over our January method of the month!</p>
<p>We&#8217;re also working on some pretty special tweaks to the website and retail locations.</p>

<p>Our efforts working with Haitian farmers to improve yields and quality are paying dividends, as proven by the January issue of <a href="http://www.coffeereview.com/review.cfm?ID=3041" target="_blank">Coffee Review</a>, which gave our Haitian Single Origin coffee the highest score ever received for a coffee from the country!</p>
<p>If that wasn&#8217;t enough, our Library location has developed a great food menu to match our coffees AND our first ever commercial is coming out thanks to the efforts of our friends at<a href="http://www.ninelinepro.com/#" target="_blank"> Nine Line Productions</a>, we think sharing it with you here is a great way to leave you for now&#8230;</p>
