Our first idea to spice up your spring coffee game is to make an herb-infused simple syrup! These are truly so easy to make, and you can choose your favorite herb (or blend of herbs) to make your signature syrup. Add it to lattes, iced coffees, iced teas, or even hot coffee with cream. Yum!

Here’s what you do:

  1. Weigh out equal parts cane sugar and water. 500g of each makes about a good-sized bottle of syrup, but you can scale it down if you don’t need much.

  2. Boil the sugar and water. Stirring until it comes together and the sugar is dissolved. This happens fairly quickly.

  3. Toss in a handful of fresh herbs or a couple of springs of dried! About 2-3 Tablespoons is good, but you can definitely eyeball this.

  4. Stir and take it off the heat.

  5. Sit it aside until it is cool to the touch. This should take at least an hour— you want the herbs to steep for at least 1-2 hours.

  6. Strain and enjoy!

Herbs that are often combined with coffee include lavender and rosemary, but mint is good too! We say, try any herb you love!

Our second spring-inspired coffee recipe is a tonic or a coffee soda. These are so easy to make once you have the right ingredients, and they are sure to impress your guests!

All you need is this:

  • A tumbler or rocks glass full of ice

  • 8 oz of sparkling water or tonic water (whatever style or brand you prefer)

  • 2 oz of cold brew concentrate or one double shot of espresso

  • 1 oz of simple syrup (your spring herb ones will be perfect!)

  • an herb spring or a citrus wedge for garnish

All you do to assemble this is pour the sparkling water over the ice, add the syrup, slowly pour the coffee on top, and garnish! These drinks are so refreshing and beautiful! You can play around with fun combos like orange lavender or rosemary and lime.

Our last spring-inspired coffee recipe is a shakerado. This one is going to be sweet, creamy, and ice cold!

What you’ll need:

  • a cocktail shaker

  • ice

  • simple syrup

  • cream

  • cold brew concentrate or espresso

To make this drink just fill the cocktail shaker about 2/3 full of ice. Add a 1:1 ratio of cold brew concentrate and cream. 4 oz of each makes a good-sized drink. Or add 4 oz of cream and a double espresso shot. Then add 1 oz of your fav. flavor syrup. (You can always add more if you like your coffee sweeter.) Put the lid on and shake, shake, shake! Shake until the cocktail shaker is really cold on the outside. Pour into a glass, making sure you pour out all the beautiful cold foam you made. Enjoy! This one does well with flavors like coconut, rosemary, lavender, anything that hints at warmer days ahead.
